What actually happens in the hotel room

It is seven in the evening. A couple are in a hotel room in Dubai Marina on the second night of a five-night trip. It is her birthday tomorrow, so tonight is the good dinner. Neither of them has been to Dubai before. Neither of them opens a map. One of them picks up a phone and types the question the way they would say it out loud, then reads the answer to the other one. Four restaurants get named. They book the second one, because the reason attached to it mentioned the terrace.

Nothing in that sequence involved your website. The assistant answered from what it could retrieve: Google Business Profiles, a couple of Dubai dining guides, review text, and whatever menu content was readable as text. If your restaurant was not represented in those sources in the vocabulary of the question, you were never a candidate.

Your menu, as text

Dish names, ingredients, prices and dietary notes need to exist as ordinary text on a page. A PDF or a photographed menu carries none of that into a retrieval index. This is the most common single failure we find, and it costs you every dish-level question ever asked.

Google Business Profile category accuracy

The primary category is the strongest categorical signal you control. A steakhouse filed under 'Restaurant' rather than 'Steak house' is quietly excluded from a whole class of questions. Hours, attributes, service options and the Q&A section all get read too.

Review recency and review text

Not the star average. Assistants lift phrases from recent reviews: 'quiet enough to talk', 'the terrace at sunset', 'they did a cake for us'. Reviews written in words are usable evidence. Ratings without text are close to inert.

Restaurant schema with menu, cuisine, address, hours and price range, plus consistent listings across the review and booking platforms. Consistency is the point: the same name, address and phone everywhere, character for character.

The gap we usually find

The pattern repeats almost every time, and none of it is about the food.

  • The menu is a PDF, or a set of images, or a slideshow. No dish exists as text anywhere on the internet.
  • There is no occasion language on the site at all. Nothing says date night, family friendly, business lunch, outdoor seating or late kitchen, even when the restaurant is obviously all five.
  • The Google Business Profile sits in a generic primary category chosen years ago by someone who has since left.
  • Reviews are plentiful and recent but the restaurant never responds, so there is no second voice describing the place in its own words.
  • Zero third-party pages describe the restaurant in the phrasing people actually ask in. There may be dozens of mentions, all of them a name in a list with no reason attached.

Every item on that list is fixable, most of them in weeks rather than months, and none of them requires rebuilding your website.

Competitors who are named usually have three or four independent pages saying the same thing about them.

Does my menu need to be text on the page instead of a PDF?

In practice, yes. A PDF or an image of a menu carries your dish names, prices and dietary notes in a form most retrieval pipelines will not read reliably. That is the single most common fixable failure we find in Dubai restaurants. Publish the menu as ordinary HTML text on a page, keep the PDF for download if you want it, and the dish-level vocabulary becomes available to the models.

Do I need more Google reviews to be recommended by AI?

Volume matters less than you would expect, and the text matters more. A hundred recent reviews that describe the terrace, the noise level, the service on a birthday and the vegetarian options give a model far more to work with than a thousand five-star ratings with no words. Recency counts too, because assistants weight sources that look current. Never buy reviews: fabricated review text is inconsistent, and inconsistency is exactly what breaks a model's picture of you.
